The man who’s credited for building up an extensive wine list with more than 300 wines. Victor, a French national, travels between his two homes- South Africa and Singapore. During his several annual visits to South Africa, Victor can be found catching up with some of the country’s leading producers as well as up and coming talents on the latest reports on current vintages. This lover of nature is also an exercise enthusiast, and will not hesitate to tell you that a glass or two of wine is good for your health. When he is in Singapore, regulars love to catch hold of him and ask him for recommendations- then promptly buy the bottles.

The lady who runs the business with a strong mind and big entrepreneurial spirit and a firm believer that a good wine and dine experience need not cost an arm and a leg. Her biggest dream is to have every household in Singapore to share a bottle a wine with their loved ones at dinner. An artist at heart, Belinda combines her artistic passion with professional rigour by constantly adding touches such as creating floral arrangements for the restaurants and designing the restaurant menu during the wee hours of the night.

 

Dan Yeong

The behind-the-scenes man who ensures all operations run smoothly. This may sound like a simple job, but in fact includes human resource issues, stock control and maintenance….and also chasing mosquitoes and annihilating colonies of ants. He’s also the IT expert, and takes charge of all point-of-sales training. Dan also wears the hat as the resident photographer, and his works can be seen in food menu and the monthly e-newsletter. A family-centered man, Dan loves nothing more than kicking back and relaxing with his daughter and wife. With a glass of wine, of course.

 

Dick Lum

Dick was awarded ‘Sommelier of The Year’ year in 1994 by Sopexa. Everything about him is related to wine; Veuve Clicquot Champagne Scholarship, Grand Prix Du Sommelier World Championship; Academie du Vin de Bandol. However, Dick is no French man, he is a true blue Singaporean. Always ready and eager to share his knowledge, we are fortunate to have Dick to taste all the wines before it goes to you.

 

Keith Tan

Keith graduated from Shatec in 2002. Perceived as young because of his age; judging a book by its cover is misleading because he is ‘The Leader’, the young chef behind the success of the company. Under his helm is a crew of 20. Perhaps, because, he has been observing his mum’s cooking since young, he always lands an earnest home touch to his dishes; many customers have felt his sincerity and passion for cooking merely by tasting his dishes. He is the pillar of our business.

Ginny worked several years in a multi-national company in public relations and marketing communications, and a short stint with the academicians before she decides that her zeal in life is in the food and wine industry - a lifestyle she embraces instead of the word ‘work’. A meticulous person with a sharp eye for details, your business is her business because she will go the extra mile to make it ‘perfect’. With her in the forefront of business, we can’t afford to make mistakes.

This is the upside of Gen Y - Kailing is a thoroughbred Singaporean who graduated with a local degree in accountancy, yes you read it right – accountancy. She decided that she would not want to spend her life crunching numbers and very much prefers to meet people and interact with guests. Kailing believes that there is always more to life; she enjoys travelling backpacker-style to have a more intimate journey with the place and its people.
